Starting on this new diet can be daunting. Frightening. I avoided it for a long time because it seemed like "there was nothing left to eat!" I found that there is still plenty to eat...and what we are now eating is much healthier. Here's a little help to get you going on this diet!
In my opinion, the best way to promote the fastest healing of the intestines and the body is the "jump in and don't look back" approach. The body cannot begin to heal until it is free from all the gluten, casein and soy molecules. Changes in behavior and development cannot be seen until these foods/molecules are eliminated.
I created a document that includes a menu plan, as well as shopping list, for doing a 3-week trial period on this diet. If you wish to do this trial for a longer period of time, then just repeat the plan in the document. Make modifications to the plan and add new recipes as you come up with them. This plan is to help get you jumped started!

This would be fabulous! We're actually putting my hubby on a gluten free diet for the next few weeks to see if it helps what ails him. I'll be waiting for the link for sure!

Do the Van's GF waffles have soy in them? I was thinking they might.
Thanks so very much for starting this site! My 20 month old son either has food allergies or celiac disease or both. We have been on a gluten free soy free dairy free nut free diet for some 2-3 months now with much success. However, he seems to be having some problems recently which I can't seem to pinpoint, but I think you are already beginning to help. I had cut out all dairy except butter. I actually said, but how can I cook without butter! I shall try! Also, just curious if your kiddos have tried goats milk. My son has been on rice milk but we are experimenting with goat's milk at the suggestion of our naturopath. One more question...to do the gluten free, do you avoid the ingredient "natural flavorings" seen in things like ketchup, salad dressings, sausage, you name it?
