Brownie Bites


Recipe adapted from Gluten Free Gourmet Cooks Fast and Healthy

Ingredients
2/3 cup GF Baking Mix (I use Bob's Red Mill)
1/3 cup cocoa
1/2 tsp cinnamon
1/4 tsp salt
2 egg whites
1 egg
2/3 cup white sugar
6 tbsp unsweetened applesauce
2 tbsp canola oil
1 1/2 tsp vanilla
1/4 cup chopped pecans (optional)
1/4 cup EnjoyLife chocolate chips (optional)

Directions
1. Preheat oven to 350. Coat mini muffin tins with canola oil (I use a paper towel and twist.)
2. In mixing bowl (or KitchenAid), combine egg whites and egg. Add vanilla, applesauce and oil. Whisk well.
3. Add GF flour mix, cocoa, cinnamon and salt. Whisk until well blended. Add chopped nuts and chocolate chips if you prefer.
4. Pour into mini muffin tins using ice cream scooper.
5. Bake at 350 for 12-15 minutes. Cool and remove from tins. Serve warm. These freeze well and thaw quickly on the counter or in the microwave.

I tried this recipe with Jules' Nearly Normal flour (gfcfsf) and it turned out great! My family always has this flour handy b/c it's a 1-1 substitute in any recipe. It keeps the baked goods fresh for a week too (not that that's much of an issue with 5 gf eaters in the house!)
