Chocolate Chip Cookies - GFCFSF and Egg Free

Ingredients
2 tbsp ground flaxseed
6 tbsp water
2 tsp vanilla
1/3 cup white sugar
2/3 cup brown sugar
3 tbsp canola oil
3 tbsp coconut oil
2 tbsp applesauce
1 2/3 cup GF Baking Flour
3 Tbsp garbanzo bean flour
3 Tbsp potato flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup Enjoy Life chocolate chips
1/4 cup chopped pecans or walnuts

Directions
1. Combine flaxseed and water in KitchenAid or bowl. Mix for 1 minute. Stop mixer. Add sugars, vanilla, oils and applesauce. Mix well, about 2 minutes in the KitchenAid.
2. Add baking flour, bean flour, potato flour, baking soda and salt into wet ingredients. Mix for 2-3 minutes.
3. Add Enjoy Life chocolate chips and nuts (optional).
4. Scoop onto cookie sheet. Using back of spoon, press cookie dough into flat disks. Wet the back of the spoon to prevent "sticking."

These looks great! My family uses Jules' Nearly Normal flour (gf/cf/sf) and its is BY FAR the best one we've found. No aftertaste or crumbly baked goods--and the xanthan gum is included so it's literally just added in in place of wheat flour. It's much easier to just have one bag of flour as well (rather than the cabinet full of varieties and mixes that we used to have.) It's easy to find online (www.nearlynormalkitchen.com). Yay for cookies back in our lives!
