
I'm always looking to expand our "snack repertoire."
Since we can no longer have teddy grahams and cheezits, it's been a struggle to get the boys a variety of snacks! Don't get me wrong, I'm so thankful that they can't eat these "nutrition-less" snacks!
Here are a few new snacks that I'm hoping to try out soon!
Trail Mix
Lightly salted peanuts
EnjoyLife chocolate chips
Sulfite-free dried fruits - cranberries, raisins, apricots, apples
(Of course, do not include peanuts if allergic!!!)
Carrot Sticks, Celery Sticks, Broccoli "Trees" with Hummus
Hummus
1 15 oz can garbanzo beans
2 Tbsp lemon juice
3 Tbsp sesame tahini or natural peanut butter
3 1/2 Tbsp water or bean juice
1 garlic clove
Salt/Pepper, to taste
Place all ingredients in food processor and blend until smooth. Serve with fresh veggie sticks!
Tropical Trio Sorbet
1 cup fresh or frozen mango chunks
2 cups coconut milk
1 cup water
1/2 cup grape juice concentrate (frozen)
1 cup crushed pineapple
Blend ingredients in blender until smooth. Put blender in fridge for at least an hour to cool down ingredients. Pour into ice cream maker and let run for 25 minutes, or until thickened. Transfer from freezer bowl into serving bowls and freeze for 4-6 hours.
Peach Sorbet
1/3 cup cashews
3 ripe peaches
1 cup coconut milk
1 cup water
3/4 cup honey
2 tsp vanilla
Blend ingredients in blender until smooth. Put blender in fridge for at least an hour to cool down ingredients. Pour into ice cream maker and let run for 25 minutes, or until thickened. Transfer from freezer bowl into serving bowls and freeze for 4-6 hours.

My kids FAVORITE food in summer is fresh-fruit popsicles.
They choose the fruit & fruit combos often combining kiwi/strawberry, banana/strawberry, etc. We go to the local farmer's market or local organic farms in the summer to keep costs down.
We come home, puree the fruit with a tiny bit of water, pour into popcicle molds and that's it! You have TRUE fruit popcicles that the kids LOVE because they helped choose and make.
