Ingredients
6 small red potatoes
1/3 cup rice milk
2 tsp extra virgin olive oil
Directions
Scrub and cut red potatoes into quarters.
Boil for about 10 minutes, until soft and "mashable."
Drain water and place in bowl to mash.
Mash cooked red potatoes with potato masher. Add rice milk and olive oil.
Add more rice milk for creamier potatoes or less milk for chunkier potatoes.
Add crushed garlic.
Season with salt and pepper to taste.
