Twice Baked Potatoes

Ingredients
4 potatoes
1/2 - 1 cup rice milk
3 tbsp olive oil
1/4 tsp garlic powder
Salt and pepper to taste

Directions
1. Preheat oven to 400.
2. Scrub and pat dry potatoes. Slit potatoes. Place them directly onto oven rack. Bake for 50-60 minutes, until soft. (Larger potatoes may take longer to cook through.)
3. When potatoes are cooked, remove from oven and let cool about 10 minutes. Open them up and scoop out the insides. Set the "shells" aside for refilling later.
4. In a large mixing bowl, mash the potatoes and add rice milk, olive oil, and spices. Mix with spoon or blend with hand mixer. Other mix-in ideas would be chopped bacon pieces, chopped chives, or diced ham (assuming these ingredients are GFCFSF!)
5. Scoop "mashed" potatoes back into the "shells".
6. Bake the potatoes again at 350 for 20 minutes.
